I admit this one is more directed at Uber, although other (constructive) opinions are welcome I have seen a couple of threads where the economy system is being debated. I'm quite certain that it will be best just to wait and see, but I was wondering if Uber think that it will be possible to server-mod the economy back to a TA or SupCom style if someone was willing to put in the work? I guess it's possible this might have been better posted in the Mod forum, but I thought that those who are not a fan of the current economy style might appreciate getting an answer to this also.

You are in the correct section of the forums. Its just that the server probably won't be released during the alpha so these kinds of mods won't be possible until some point in the future. Possibly not until release. But they will be possible eventually.
